The Riverview Food Services Department is thrilled to share that Oxbow Farms is one of several local farms in our area who will be delivering fresh fruits and vegetables for meals this year. Riverview has partnerships with several Washington-based farms. With Oxbow, we wanted to shine a spotlight on a local partner who supports our community and our district.
Recently, our Food Services team earned a $24,000 Farm-to-School grant to assist in paying for purchases from local farms like Oxbow. In these first deliveries, the district received large radishes, kale, red ace beets, golden beets, and lunchbox peppers.
“Oxbow has an excellent roadside stand everyone should check out!” shares Shelly Young, Riverview’s Food Services Supervisor. With the arrival of this new, fresh produce, Young has also challenged her kitchen staff to come up with new recipes to try out with our students. Beets were tested first, as staff members prepared Asian Sesame Beet Salad and Oven-roasted Beets.
Even our own Super Lunch Lady got involved in the fun!
Additionally, red tomatoes from the Cedarcrest greenhouse have been made available for use in our salad bars and recipe creation. Thanks to our amazing Food Services team for images and updates, as they continue to work hard to create community with local farms and provide healthy food options for students across our district.
